WiesenSecco, an alcohol-free organic aperitif made from not-from-concentrate orchard-meadow juices and meadow herbs, produced by Nordappel in Kirchlinteln. Thirty per cent quince juice forms the full-bodied foundation, six organic herbs from the company's own orchard meadows bring herbal freshness, and ginger from Lower Saxony the spicy heat.
What sets this product apart
WiesenSecco is not a de-alcoholised wine but refined not-from-concentrate juice from the orchard meadow. Apple mint, peppermint, lemon balm, marigold, blue mallow & cornflower are macerated cold, so the herbs keep their complexity. Ginger from Lower Saxony brings spicy heat, lemon zest freshness. The result tastes delicately tart and herb-fresh, with a fine sparkle, and works as an aperitif and alongside light dishes, all day long.
Agricultural scientist Ole Klann founded Nordappel in 2020 after discovering old apple varieties with distinctive aromas in abandoned meadows around Oldenburg. Josh Immendorf, a biodynamic farmer and orchard warden, joined in 2023. Since 2024 the two have run their own juice press in Kirchlinteln and follow their trees from planting through care to the glass. Their driving idea: whoever drinks orchard-meadow fruit helps preserve it.
