A moist Kürbisstuten, a soft North German white loaf, made with 33 per cent fresh pumpkin and butter and baked by Bäckerei Harms in Lüneburg. The pumpkins grow at the farm next door, harvested by the bakery team themselves, in season from August to November.

What sets this product apart

For the Kürbisstuten, the liquid from freshly shredded pumpkins replaces the water in the recipe entirely: 33 per cent pumpkin, plus butter. The result is a fine loaf with a gentle sweetness, moist, light and springy, with a thin crust and a lovely colour. Around 15,000 loaves are sold each season in the Lüneburg area.

Bäckerei Harms has been baking in Lüneburg since 1898, today in its fifth generation: eight natural sourdoughs refreshed daily, long proving times, flour from the Mühle Rüningen near Braunschweig. A neighbouring farmer grows the pumpkins specially for the Kürbisstuten. Every ten days the team heads out to the field with the apprentices to harvest.
