Matjes, the mild-cured young herring, as lightly salted fillets, matured Nordic-style and finished with selected herbs: the Fokken & Müller workshop in Emden has been working with herring from summer catches off the Norwegian coast, skinned by hand, since 1895.
What sets this product apart
The starting point is herring from summer catches off the coasts of Norway. In Emden, the workshop skins the fillets by hand, then matures them Nordic-style as fillets. The salt content stays low, unusually mild for a Matjes. Selected herbs add the savoury note, and the fillets whet the appetite on sight alone. That is how the finest summer catch becomes an Emden speciality.
Fokken & Müller was founded in Emden in 1895; today the fourth generation runs the family business. The Matjes and delicatessen workshop stands in the fishing tradition of the seaport town and works to a traditional recipe. Customers all over Germany value the mild flavour, the reliability & the family feel: the Matjes tastes the same 365 days a year. A broad network of wholesalers takes it into food retail and directly to consumers.
